Chipotle chiles add a smoky heat to a classic

This pulled pork is saucy and spicy, but the creamy coleslaw helps calm the heat. Pile it high on some hamburger buns or serve it in toasted tortillas for a change. Either way, this will be an instant win.

Ingredients

Pulled Pork

1
(4- to 5-lb.) boneless pork butt
Kosher salt
Freshly ground black pepper
1 tbsp.
chili powder
1 tbsp.
light brown sugar
2 tsp.
ground cumin
1 1/2 tsp.
dried oregano
1 tbsp.
neutral oil
1
small yellow onion, finely chopped
3 tbsp.
apple cider vinegar
2
chipotle chiles in adobo sauce, finely chopped, plus 1/4 c. sauce
1/4 c.
tomato paste

Coleslaw & Assembly (Optional)

head green cabbage, sliced

head red cabbage, sliced

medium carrot, shredded

jalapeño, seeded, finely chopped

mayonnaise
2 tbsp.
sour cream
1 tbsp.
Dijon mustard
Juice of 1 lime
1 tsp.
cumin seeds

Directions

Pulled Pork
1. Step 1
  
  Preheat oven to 325°. Trim excess fat from pork and pat dry with paper towels; generously season all over with salt and pepper.
2. Step 2In a small bowl, combine chili powder, brown sugar, cumin, and oregano. Rub spice mixture all over pork.
3. Step 3In a large Dutch oven over medium-high heat, heat oil. Add pork and cook, turning occasionally, until golden brown on all sides, about 5 minutes per side. Transfer to a large plate.
4. Step 4In same pot over medium heat, cook yellow onion, stirring, until softened, about 7 minutes. Add vinegar and scrape browned bits from bottom of pot. Add chipotle chiles, adobo sauce, tomato paste, and 2 cups water and stir to combine. Return pork and any accumulated juices to Dutch oven.
5. Step 5Cover pot and transfer to oven. Bake pork until meat easily falls apart with a fork, 3 to 4 hours.
6. Step 6Using 2 forks, shred meat in pot, then stir to coat meat in cooking liquid.
Coleslaw & Assembly (Optional)
1. Step 1While pork bakes, in a large bowl, combine green cabbage, red cabbage, carrot, and jalapeño.
2. Step 2In a medium bowl, whisk mayonnaise, sour cream, mustard, and lime juice until combined. Add cumin; season with salt and pepper.
3. Step 3Pour dressing over cabbage mixture and toss to combine; adjust seasonings, if needed.
4. Step 4Pile bottom buns with pulled pork, coleslaw, and pickled onions. Close with top buns.
