Grilled Cabbage Steaks

cabbage is a star side dish, it also makes for a perfect main. It’s hearty, substantial, and is surprisingly great on the grill. If you’re looking for an alternative to steak for your summer BBQ, turn to these cabbage “steaks”. We give ours the loaded treatment, but these steaks are nothing if not versatile. Grill a few up, add on your toppings, and let the BBQ begin! 

How to make grilled cabbage steaks:
The best cabbage to buy. To make sure your cabbage steaks stay in one piece on the grill, pick the most compact head of cabbage when you’re out shopping. The tighter the leaves are, the better they’ll hold together when cut.
The ingredients for grilled cabbage steaks. All you need to make grilled cabbage steaks is cabbage, oil, and salt. Everything else is optional: We top this grilled cabbage à la wedge salad with bacon, blue cheese, AND ranch dressing for good measure.
Variations. Leave the bacon out of the picture if you prefer to keep these completely vegetarian; skip the ranch and cheese if you’re vegan and simply top it with your favorite condiments and toasted nuts instead.

Serving grilled cabbage steaks:
Grilled cabbage is an excellent “blank canvas” to carry out any other flavors that you may have your heart set on, so feel free to customize as you see fit to find your true cabbage soulmate. Spoon it with honey mustard dressing, dollop it with garlicky romesco, or drizzle some prik nam pla for a spicy kick. Other fantastic options would be a buffalo-style cabbage, a Caprese-style cabbage, or a lemon-garlic dressed grilled cabbage with lemon and garlic. You really can’t go wrong! 

Storage:
While the cabbage won’t stay super crispy, it will reheat nicely as leftovers: just store it in the fridge for up to 3 days, microwave it when you’re ready to eat, and top it with all new toppings when serving. If you’d rather transform it into another dish, that charred cabbage flavor would add a whole new layer of intrigue to a bowl of cabbage soup.
