A Quesarito is essentially a burrito made with a quesadilla instead of a single tortilla. So you’re going to double stuff your tortillas with cheese, then the filling to make the Quesarito. How to Make a Quesarito

A quick search on Taco Bell’s website will tell you how the Quesarito was invented. Much like most Mexican recipes, a Quesarito is all about assembling. Once you have the basic toppings, sauces, seasonings and cheeses ready to go, you can start with a quesadilla by sandwiching two tortillas with cheese and lightly cooking them to melt the cheese. You then treat that quesadilla like a burrito, add the seasoned beef (or filling of your choice), spicy chipotle sauce, sour cream, cheese sauce, and seasoned rice. You really can get creative with whatever you want to fill these with. Like Taco Bell claims, the first rule for this burrito is that there are no rules!

Quesarito Ingredients

  • Tortilla: You will need large burrito-style tortillas. Get the largest one you can find!
  • Cheese: While any shredded cheese will work, we highly recommend getting a Mexican blend for the best flavor combination.
  • Quesadilla Sauce: You can easily find Taco Bell style quesadilla sauce or chipotle sauce. Use any brand you prefer or you can also make this at home.
  • Cheese Sauce: Unlike the Italian bechamel sauce, the nacho cheese sauce is pure melted cheese! You can certainly buy good quality cheese and melt it yourself, or buy the cheese sauce from the store.
  • Meat: Most people prefer to use steak/beef, but you can certainly use any protein you prefer, and cook it accordingly
  • Salsa: You can make fresh pico de gallo and black bean corn salsa. But you can also buy salsa sauces to drizzle on top of all the veggies.
  • Guacamole: No Mexican food is complete with guacamole and you can certainly make it at home, or buy it from the store.
  • Sour Cream: Adds a much needed refreshing factor to the otherwise spicy burrito! If you don’t have sour cream, you can always substitute with some sour greek yogurt.
  • White Rice: Rice is what adds volume and makes the burrito so satiating. You can use plain white rice, since there’s already so much going on with the roll. But if you have some seasoned rice on hand, you can also use that up.
  • Seasonings: Then just top off with some salt and pepper or other Mexican-inspired seasonings like taco, fajita mix etc.

How to Make a Vegetarian Quesarito

Now, most of the quesarito recipes you’ll come across are predominantly meat forward. However, you can always make the substitutions to customize the steak quesarito into a vegan or a vegetarian one.

For the meat component, you can use crumbled or sliced tofu. You obviously wont need to cook it as long as meat. Just crisp the tofu up along with other veggies and spices. If you’re looking for something meatier, you can use oyster mushrooms, tempeh or seitan. The process of marinating and cooking will be similar to that of meat, but since these are plant-based alternatives, the cooking time will be significantly reduced. Similarly, if you’re a vegan or looking for vegetarian cheeses (that don’t use rennet), you can safely choose plant-based cheeses like Mexican shredded cheese or Colby Jack. Taco Bell Quesarito


  • 2 large (10-inch) flour tortillas
  • ½ cup Mexican cheese
  • ¼ cup seasoned ground beef, or any protein or choice
  • 1 cup white or seasoned rice
  • 2 Tbsp sour cream
  • 2 Tbsp Taco Bell Quesadilla Sauce
  • 2 Tbsp nacho cheese, melted
  • 1 Tbsp guacamole
  • 1 Tbsp tomatillo salsa
  • 1 Tbsp pico de gallo
  • ½ tsp salt & pepper
  • 1 Tbsp vegetable oil
  • 1 Tbsp sour cream

  1. Preheat the oven or a grill to a high broil.

  2. Place 1 tortilla flat on a baking sheet or the grill pan. Cover with the shredded Mexican cheese. Top it off with the other tortilla. Broil in the oven or grill for 2 minutes, until cheese is melted, then remove quesadilla from oven and set aside.

  3. Place the quesadilla on work surface. Spread sour cream and quesadilla sauce.

  4. Add the cooked beef (or protein of choice), rice, pico de gallo, grilled veggies, salsa and nacho cheese. Finish off with a crack of salt and pepper.

  5. Roll it up like your would a burrito.

  6. Heat some oil on the grill or baking pan and add the burrito. Broil or grill until its crunchy on the outside.

  7. Roll it up in a foil and enjoy hot.
