Ingredients
Pulled Pork
- 1
(4- to 5-lb.) boneless pork butt

chili powder
- 1 tbsp.
light brown sugar
- 2 tsp.
ground cumin
- 1 1/2 tsp.
dried oregano
- 1 tbsp.
neutral oil
- 1
small yellow onion, finely chopped
- 3 tbsp.
apple cider vinegar
- 2
chipotle chiles in adobo sauce, finely chopped, plus 1/4 c. sauce
- 1/4 c.
tomato paste
Coleslaw & Assembly (Optional)

head green cabbage, sliced
- 1/3
head red cabbage, sliced

medium carrot, shredded
- 1
jalapeño, seeded, finely chopped
- 1/4 c.
mayonnaise
- 2 tbsp.
sour cream

Directions

Pulled Pork
- Step 1
Preheat oven to 325°. Trim excess fat from pork and pat dry with paper towels; generously season all over with salt and pepper.
- Step 2In a small bowl, combine chili powder, brown sugar, cumin, and oregano. Rub spice mixture all over pork.
- Step 3In a large Dutch oven over medium-high heat, heat oil. Add pork and cook, turning occasionally, until golden brown on all sides, about 5 minutes per side. Transfer to a large plate.
- Step 4In same pot over medium heat, cook yellow onion, stirring, until softened, about 7 minutes. Add vinegar and scrape browned bits from bottom of pot. Add chipotle chiles, adobo sauce, tomato paste, and 2 cups water and stir to combine. Return pork and any accumulated juices to Dutch oven.
- Step 5Cover pot and transfer to oven. Bake pork until meat easily falls apart with a fork, 3 to 4 hours.
- Step 6Using 2 forks, shred meat in pot, then stir to coat meat in cooking liquid.

- Step 1While pork bakes, in a large bowl, combine green cabbage, red cabbage, carrot, and jalapeño.
- Step 2In a medium bowl, whisk mayonnaise, sour cream, mustard, and lime juice until combined. Add cumin; season with salt and pepper.
- Step 3Pour dressing over cabbage mixture and toss to combine; adjust seasonings, if needed.
- Step 4Pile bottom buns with pulled pork, coleslaw, and pickled onions. Close with top buns.
