What makes these

Irish nachos unique, you may ask? For the base, we skip the chips and load our toppings onto crispy roasted potatoes instead. All of our festive (and customizable) toppings—homemade corned beef, horseradish, pickled jalapeños, black beans, and plenty of cheese—are layered onto our crispy potatoes, creating a flavor-packed combo in every bite. How to make crispy potatoes:
To get an extra-crispy potato base, our slices are parboiled before being roasted. This way, the insides stay creamy while the outside gets perfectly crispy as they’re being blasted with heat in the oven.

The corned beef:
We included a recipe to make your own corned beef for these nachos, but if you’re pressed for time, you can always buy it pre-made. Top tip: These nachos are one of the best ways to use up any leftover corned beef you may have on hand.

How to top Irish nachos:
Like any good nacho recipe, the toppings are where the fun really begins. We went with a combo of classic and creative flavors for this recipe: Homemade corned beef and horseradish pair surprisingly well with staple nacho toppings like black beans, pickled jalapeños, and red onion. Along with our cheese (we used two types of cheddar), we added dollops of sour cream for an extra creamy factor.

As with all our nacho recipes, you can customize these as you please! Use pre-made corned beef, swap out the cheese for your favorite melty variety, or add on your favorite nacho toppings. Layered on top of cheesy, crispy potatoes, you’ve got plenty of delicious topping options.

Top tip: We highly recommend shredding your cheese from a block. Buying pre-shredded bags of cheese won’t result in the ultra-melty, stretchy result you get when you freshly shred your cheese.
