The bread layer:
If you’re not up for making homemade focaccia (although our recipe is pretty unbeatable), there are a couple ways you can go about this. If you don’t have access to a bakery or market that sells pre-made focaccia, then King Arthur focaccia mix is your go-to. It comes with a packet of yeast and easy-to-follow instructions, making it an ideal choice for beginners. No matter what focaccia you choose, toasting the bread so it’s crispy and crusty prior to assembling is the magic step.
The avocado:
Just a simple mash is all that’s needed on the avocado layer. I prefer to keep a few chunks in for texture and season with salt and pepper. Make sure to prepare this right before serving so the avocado doesn’t oxidize quickly.
The cheese:
Once you’ve made the crunchy bread, creamy mashed avocado, and jammy sweet and sour caramelized red onions, finish the toast with a combination of tangy goat cheese coated in smoked paprika.
Storage:
This avocado toast is best eaten right away since the avocados will brown quickly. If you want to make it ahead, add some citrus juice to your avocado so they hold out longer. Cut into pieces and store in an airtight container for up to 1 day.
