Just about every color of the rainbow can be found in these simple collard green
wraps. They’re a quick and easy no-cook lunch or a nutritious and satisfying snack any time of day. Colorful bunches of shredded purple cabbage, carrots, yellow bell peppers, sliced avocado, alfalfa sprouts, and crimson red sauerkraut are rolled into big collard green leaves like a burrito. They can be made up to 1 day ahead of time, so consider tomorrow’s lunch sorted.
The collard greens act like the tortilla that you’d normally use in a burrito or wrap, but it adds another nutritious layer to the recipe. The hearty leaves are tender, but still provide a bit of a crunch to the wraps. They’re also relatively mild in flavor, which allows each of the fillings to really shine through. We like to serve each wrap with a simple creamy dipping sauce made with tahini, maple syrup, cider vinegar, and sesame seeds. No need to wonder what’s for lunch anymore.
