mulled wine, is the inspiration behind a simple syrup that takes this sour cocktail to new festive heights. A combination of ginger, cinnamon, clove, and star anise help evoke the flavors of mulled wine while keeping this a chilled, tart, and refreshing cocktail. Cognac, which is often confused with Brandy, anchors the drink, red wine adds color and flavor, the lime juice brightens it and gives the “sour” element, and the simple syrup rounds it out.
The simple syrup here makes extra and keeps for up to 1 month in the fridge. So cheers to a month long of holiday cocktails, or anything else you choose to add the syrup in… (try coffee and oatmeal!).

Simple Syrup
- Step 1
In a small saucepan over medium-high heat, bring ginger, cinnamon sticks, peppercorns, cloves, star anise (if using), and 1 1/2 cups water to a boil. Reduce heat to medium and simmer, stirring occasionally, until liquid is reduced by about half, about 20 minutes.
- Step 2Add sugar and stir until dissolved. Remove from heat and let cool about 10 minutes. Strain through a fine-mesh sieve into a heatproof container or bowl.
- Step 3Make Ahead: Syrup can be made 1 month ahead. Store in an airtight container and refrigerate.

Cocktail
- Step 1In a cocktail shaker, combine egg white, wine, Cognac, lime juice, vermouth, and 1/2 oz. simple syrup.
- Step 2Fill shaker with ice. Cover and vigorously shake until outside of shaker is very cold, about 20 seconds.
- Step 3Strain into a chilled coupe glass. Sprinkle with ground cinnamon. Garnish with lemon peel.
