We in the Delish Test Kitchen absolutely love a good
stir-fry, both for how creative you can be with them and how quick they can be to make. That being said, on extra busy weeknights, sometimes even stir-frying is too much effort. If you’re looking for a cheap & easy dinner that you can set and forget, turn to this Crockpot pepper steak.
Pepper steak is a straightforward, savory-sweet stir-fry that works incredible when made in a slow cooker. The long cook time allows the steak to get amazingly tender; it takes on some of the qualities of your favorite beef stew while still staying true to the original. Serve it over rice, and get ready for a satisfying weeknight dinner with minimal effort and maximum flavor.

Season flank steak thoroughly with salt and black pepper. In a large Crock Pot combine steak, bell pepper, onions, ginger and garlic. In a mixing bowl or measuring cup combine beef broth, soy sauce, brown sugar, rice wine vinegar and sesame oil. Season to taste with salt and pepper before adding into the Crock Pot.
- Step 2Cover and cook on high for 3 1/2 hours to 4 hours or on low for 5 to 6 hours, until the steak is totally tender. Remove the garlic and ginger.
- Step 3Optional step: If you desire the sauce to be a bit thicker, in a small bowl combine cornstarch and 1/4 cup of the cooking liquid to create a slurry. Stir the slurry into the Crock Pot, cover and cook on high until thickened, an additional 10 to 15 minutes.
