We took the classic app down a size by turning coin-sized potato slices into crispy bites ready to be topped with all your favorite loaded toppings. Whether you’re looking for an easier version of the loaded app or need to serve a big crowd this Super Bowl, these bites are the answer.
Just like in our classic potato skins recipe, we prefer to use Russet potatoes here. Only, instead of hollowing out our baked potatoes, we slice our Russets into ½” coins ready to be seasoned and baked. We toss our potato rounds in a seasoning mix of cayenne pepper, garlic powder, salt, and pepper. We suggest keeping it simple with the seasonings, but feel free to add in your favorite if you want to up the flavor.
After seasoning and baking, your bites are ready to be topped with all the best toppings. We went with shredded cheddar, bacon, sour cream, and green onions for the most classic version, but feel free to get creative! Buffalo chicken and blue cheese crumbles are a classic game day pairing while chili and cheese would make this app extra hearty.

Directions

Preheat oven to 400°. Slice potatoes into 1/2″ coins.
- Step 2In a large bowl, toss the potato rounds in olive oil. Season with salt, pepper, cayenne, and garlic powder, and toss until evenly coated. Place in a single layer on a large baking sheet. Bake for 30 to 40 minutes, until lightly browned and tender, flipping halfway through.
- Step 3Top each potato round with cheese and bacon. Broil until melty, about 2 minutes.
- Step 4Dollop sour cream onto each potato and garnish with green onions.
