Cauliflower is often used in low-carb recipes, but in my book, zucchini is so the new cauliflower. If you’re craving a grilled cheese (the easy, classic comfort food) but want to ditch the bread, then turn to this zucchini recipe. By combining grated zucchini with an egg, Parmesan, scallions, and cornstarch, you’ll create patties that, when cooked in a skillet, are the perfect “bread” for your grilled cheese. Add on some shredded cheddar, and you’ve got a cheesy, veggie-packed bite that will satisfy you just as much as the OG.
The most important thing in this recipe? Get all of the moisture out of your grated zucchini by squeezing it with a clean kitchen towel. Any excess moisture in your zucchini will cause your mixture to be overly wet, and will prevent it from holding together and frying well. Don’t rush this step!
