- Step 1
Preheat oven to 400˚F. Melt butter in a medium heavy-bottomed saucepan, and continue to cook until foamy. Add 10 of the sage leaves, then quickly remove once crisp; set aside.
- Step 2Continue to heat butter until browned, 8 to 10 minutes more; remove from heat.
- Step 3In a 9″-by-13″ casserole dish, stir together pumpkin, broth, nutmeg, and salt. Place cream-cheese brick in the center of the dish.
- Step 4Finely chop the remaining 5 sage leaves and sprinkle over the dish, along with the shallot and garlic. Drizzle with half the brown butter and season with pepper.
- Step 5Bake for 20 to 25 minutes, until mixture is hot and bubbly and cream cheese is soft to the touch.
- Step 6Remove from oven; stir in the pasta and remaining brown butter to make a creamy sauce. Serve hot, garnished with crispy sage leaves and Parmesan.
