Baked Pumpkin, Sage, And Philly Cream Cheese Pasta

Philadelphia Original Cream Cheese takes center stage, while nutty brown butter, pumpkin, and sage—an iconic trio—round out the ingredient list for a simple soon-to-be classic. Once you’ve mastered this flavor combo, you can try your hand at other seasonal iterations, but keep the Philly for that instantly delicious sauce.

Directions

    1. Step 1

      Preheat oven to 400˚F. Melt butter in a medium heavy-bottomed saucepan, and continue to cook until foamy. Add 10 of the sage leaves, then quickly remove once crisp; set aside.

    2. Step 2Continue to heat butter until browned, 8 to 10 minutes more; remove from heat.
    3. Step 3In a 9″-by-13″ casserole dish, stir together pumpkin, broth, nutmeg, and salt. Place cream-cheese brick in the center of the dish.
    4. Step 4Finely chop the remaining 5 sage leaves and sprinkle over the dish, along with the shallot and garlic. Drizzle with half the brown butter and season with pepper.
    5. Step 5Bake for 20 to 25 minutes, until mixture is hot and bubbly and cream cheese is soft to the touch.
    6. Step 6Remove from oven; stir in the pasta and remaining brown butter to make a creamy sauce. Serve hot, garnished with crispy sage leaves and Parmesan.
