One-Pot Harissa Beet Soup

one-pot beet soup goes far beyond its vibrant color, as stunning as it is. Not only does the soup come together easily, but it’s also delicious and nutritious. Antioxidant-rich beets are simmered with starchy potatoes, shallots, garlic, and aromatic harissa paste, which adds a subtle spicy and smoky flavor to the soup. Best of all, it can be served warm, cold, or at room temperature. 

This vegetarian soup can (and should!) be enjoyed year-round. It has a perfect balance between sweet, smoky, and spicy. The ruby red beets add sweetness and a mellow, earthy flavor. Potatoes help thicken the soup and add body without including any extra dairy or gluten, while the harissa paste adds a peppery kick. If you like things spicy, use a harissa paste labeled as such. If not, use a jar labeled “mild.” 

All this one-pot soup needs is a drizzle of creamy yogurt (keep it vegan by using a coconut-based yogurt alternative) and a sprinkle of toasted almonds and fresh dill to bring it all together.
