Asparagus Quiche

Finding ways to use asparagus when it’s in season becomes top priority. Using it in a

quiche is one of our favorite ways; just take a look at this perfect-for-spring recipe. The custard-like filling is studded with feta as well for an easy springtime brunch. The pie crust is flaky and buttery, and the filling couldn’t be easier to make. We love that this quiche is vegetarian, but some crumbled cooked bacon would also be incredible mixed in.

This is great for making ahead of time. The crust can be made 3 days in advance and the whole quiche can be made the day before, stored in the refrigerator. This quiche is good served both at room temperature or warmed through.
