In our book, the Cobb salad just might be the perfect

dinner salad. It’s versatile, hearty, easy to make, and even easier to meal prep. Our classic recipe creates the perfect balance of textures and flavors, all tied together by the star of the show: our homemade dressing. While you can use store-bought, our homemade vinaigrette is not only easy to make, but truly takes this salad from basic to incredible. Ready to perfect this classic, filling salad? How to make a Cobb salad:
In terms of Cobb salad, you can take a lot of different routes. Our recipe is filled with crispy bacon, hard-boiled eggs, chicken breast, and creamy avocado. For the chicken, you can poach it, grill it, bake it, or cook it in an Instant Pot. If you’re looking to get creative, you can replace it with grilled steak or sautéed shrimp. There’s a lot of room to play here, from the protein to the mix-ins. 

The dressing:
For the dressing, we included a quick recipe for a simple vinaigrette made from red wine vinegar, Dijon mustard, honey, olive oil, salt, and pepper. There’s no need to stress over the vinaigrette emulsifying—shaking together in the mason jar does all the hard work. That being said, something creamy like a homemade ranch or Caesar would also be great options, or you can sweeten things up with honey mustard.

Make it ahead:
If you want to make this ahead of time, which we think is a great idea, we recommend storing the lettuce, eggs, chicken, bacon and chives in one container. Then you can peel the avocado and chop it along with the tomatoes before adding to the salad and tossing with dressing. Everything will keep in the fridge like that for up to 3 days.
